Chacoli-Txakoli from Spain

Chacoli-Txakoli in Spanish, chacoli,or Chacoli-Txakolina, is a slightly sparkling white wine produced in the Basque Country autonomous community of Spain.

Chacoli-Txakoli is normally produced from the local grape Hondarribi Zuri and traditionally fermented in foudres which are very old large oak barrels. Most chacoli-txakoli produced today is fermented in stainless steel. There are three origin denominations dedicated to the production of Chacoli-Txakoli. They are Arabako Txakoli, in Spanish Chacoli de Alava, Bizkaiko Txakoli, in Spanish Chacoli de Vizcaya, and Getariako Txakoli, in Spanish Chacoli de Guetaria. Chacoli-Txakoli wine are high in acidity, low in alcohol and usually served in a tumbler, with tapas.

There is a Chacoli-Txakoli Museum located close to Bilbao that explains the history of chacoli-txakolina and consists of a large collection of machinery for making it.
