Chacoli-Txakoli is normally produced from the local grape Hondarribi Zuri and traditionally fermented in foudres which are very old large oak barrels. Most chacoli-txakoli produced today is fermented in stainless steel. There are three origin denominations dedicated to the production of Chacoli-Txakoli. They are Arabako Txakoli, in Spanish Chacoli de Alava, Bizkaiko Txakoli, in Spanish Chacoli de Vizcaya, and Getariako Txakoli, in Spanish Chacoli de Guetaria. Chacoli-Txakoli wine are high in acidity, low in alcohol and usually served in a tumbler, with tapas.
