Txakoli is normally produced from the local grape Hondarribi Zuri and traditionally fermented in foudres, very old, large oak barrels, but most txakolina produced today is fermented in stainless steel. There are three Denominaciones de origen dedicated to the production of Txakolina, Arabako Txakoli Spanish for Chacoli de Alava, Bizkaiko Txakoli Spanish for, Chacoli de Vizcaya, and Getariako Txakoli Spanish for Chacoli de Guetaria. Txakoli wines are high in acidity, low in alcohol and usually served in a tumbler, with tapas.
There is a Txakoli Museum located close to Bilbao that explains the history of txakolina and consists of a large collection of machinery for making it.
